2 Tablespoons of cold pressed organic olive oil
1 pound (or so) cauliflower head
Sea salt, garlic salt
Ghee, or pastured butter to taste (we now can buy Amish butter at less cost—a great option as their faith includes good animal husbandry), or more olive oil…
Nutritional Yeast
Preparation
- Preheat your oven to 4250F
- Cut cauliflower into 1″ florets and choose (or not) to use the chunks for other purposes (like this chowder recipe)
- Toss with olive oil and spread evenly on a baking sheet(s)
- Roast for 10-12 minutes until lightly browned on one side
- Flip with a spatula or spoon to place the roasted side down
- Roast another 5 minutes or until the crispiness you like best
- Cool a few minutes then sprinkle with sea salt, garlic salt if you want, and drizzle with ghee, melted Amish/pastured butter/olive oil…
- If you like, sprinkle with nutritional yeast—a great source of B vitamins
