Strawberry Poppy Seed Vinaigrette Salad Dressing

Strawberry poppy seed salad dressingI love having a salad before every meal. Even breakfast. I often make a fruit salad to enjoy with this poppy seed vinaigrette salad dressing. Ever read the ingredients in store bought salad dressings? Most are loaded with sugars, many use unhealthy oils, preservatives, artificial this and that. And it’s far more economical to blend your own.

Makes 1.5 Cups

Ingredients
½ cup extra-virgin olive oil or avocado oil
⅓ cup aged balsamic vinegar
¼ cup strawberries, stemmed and cleaned (experiment with other fruits)
1 Tablespoon poppy seeds
¼ teaspoon finely ground sea salt

Preparation

  1. Combine all ingredients except poppy seeds in a blender or food processor.
  2. Blend until liquefied.
  3. Add poppy seeds and pulse to mix in.
  4. Fruit salad with grapefruit, avocado, beetroot and pomegranate.Refrigerate in an airtight container up to two weeks

I love having a fruit salad before morning eggs (or anytime) and this strawberry poppy seed vinaigrette salad dressing provides health-promoting olive oil and fruit.
