Beet Salad Dressing

I’ve been especially loving this dressing on greens with some grilled balsamic chicken, and sliced almonds… and as an alternate dressing for cole slaw with shredded cabbage, grated carrots, and thin-sliced onions. Yum.
But don’t think you have to use it only on salads!! Spoon it over grilled salmon or halibut or chicken…
So tell me… have you ever seen or tried a dressing like this before? Have you ever used raw beets in any of your recipes??

Makes ~ 1 cup

Ingredients
1 large beet, peeled and chopped
½ red or yellow onion, sliced
1 clove garlic, crushed (or ½ teaspoon powdered)
2 Tablespoons apple cider vinegar
½ cup avocado mayonnaise
¼ cup avocado or olive oil

Preparation

  1. Place all ingredients into a Bullet or food processor.
  2. Add additional olive oil to desired consistency.
