Whoa there! Did you know that tamari (unless specified now) is not just fermented soy? Apparently it is less expensive to make it with wheat flour—yikes!! This was certainly under our radar until our crashed reflex (and bloated gut) tested for—yup, wheat. Read the label: the tamari almonds we were buying at Anchorage’s main healthfood store were full of wheat. So sorry. Look for tamari that specifically states “wheat-free.”
While looking for fun ways to prepare nuts, we developed this simple recipe that can probably be done with any nut you like; we like cashews and so do children.
Serves 4
Ingredients:
1 cup whole raw organic cashews
1 Tablespoon melted coconut oil
2 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon cardamom
¼ teaspoon nutmeg
Preparation:
1. Preheat oven to 350
2. Mix all the spices together and then combine with the nuts and coconut oil. Spread on a baking sheet.
3. Roast in preheated oven for 7-9 minutes, or until lightly golden, stirring once about halfway through. Be careful not to burn.
4. Cool and serve.
Hint: (warning? 😉 make a double batch.
