Ah those “gluten-free” isles… ALL seeds from the grass family of plants, a.k.a. cereal grains, contain gluten; some seeds like wheat have more than others… wheat has been intentionally hybridized to have 50 times more gluten today than even a few decades ago.
Oats, at the other end of the cereal grain spectrum, has very little gluten. So little that it is allowed to be called “gluten free” as long as it is certified processed with no cross-contamination by wheat, barley, rye… Oats contain avenin, a protein enough similar to wheat gluten that it is recognized by the immune system of some people. In other words, avenin can create inflammation, especially in people with celiac disease (a disease triggered by the gluten protein).
