I love having a salad before every meal. Even breakfast. I often make a fruit salad to enjoy with this poppy seed vinaigrette salad dressing. Ever read the ingredients in store bought salad dressings? Most are loaded with sugars, many use unhealthy oils, preservatives, artificial this and that. And it’s far more economical to blend your own.
Makes 1.5 Cups
Ingredients
½ cup extra-virgin olive oil or avocado oil
⅓ cup aged balsamic vinegar
¼ cup strawberries, stemmed and cleaned (experiment with other fruits)
1 Tablespoon poppy seeds
¼ teaspoon finely ground sea salt
Preparation
- Combine all ingredients except poppy seeds in a blender or food processor.
- Blend until liquefied.
- Add poppy seeds and pulse to mix in.
- Refrigerate in an airtight container up to two weeks
