Why I started this whole food nutrition and recipe resource

Perhaps at no time in history have Americans eaten so poorly and had so many health issues while at the same time being bombarded by messages to have more of this or that and less of the otheralways for health reasons, it seems.

Unfortunately, most of today’s consumption nutrition decisions are driven by corporate marketing and not by sound nutrition advice. The scales have tipped. We out of balance and we are paying for this with our health, quality of life and enormous medical costs.Our bodies must be given what they uniquely need to support life, health, and maintain their energetic balance: primary food and secondary nutrition.

Many dietary theories have been developed and foisted on people just to make a buck. Hard to believe, but a 1923 Farmers Bulletin made an “official” recommendation of one pound of sugar per person per day. Did this have anything to do with our health? No! In 1923, government contracts for sugar beet production were financially upside down, imported cane sugar was at an all time low–in short; the market was glutted. For pure economic reasons sugar was positioned as nutritional, a cure-all and part of a daily nutrition habit.

Our consumption of sugar has now increased nearly 1000-fold despite nutrition experts saying to dramatically reduce sugar consumption given its negative affects on behavior and health. We continue to find sugar added to everything on the store shelves, even “plain” organic chicken broth!! And, dietitians and nutritionists are still being taught the old dogma.

Nearly all commercialized food has followed this pattern; especially that made with wheat, corn, soy and dairy–each with their own lobbying powers that result in government decrees such as “The Food Pyramid” and now “MyPlate”. Despite the fact that trans-fat places enormous strain on our thyroid, digestive and immune systems; is now linked with cancer, heart disease, increased cholesterol and more; margarine (trans-fat from seed oils) was promoted for “health reasons” during and after WWII.

Another corn-lobbyist favorite is fructose or corn sugar or high fructose corn syrup. Wow has that made money for Kelloggs, Coke, Pepsi, General Mills and more… a sugar cheaper than, well, sugar. But unfortunately this particular sugar bypasses some complicated biochemistry and stimulates the body to pack on fat and creates inflammation, liver, kidney problems and more. Of course that info is buried to the consumer and you hear only about the need for electrolytes in Gatorade (which your body cannot absorb due to the sugar) the need to restore carbohydrates… (which is just plain false) and the need to reward good behavior (with something that creates hyperactivity symptoms). Go figure.

So this website and information are for you–the person who suspects the nutrition information is faulty but doesn’t quite know what is correct.

We are all unique and with unique bodies and personal preferences. Let’s cast off the things that our neighbors, media, advertising, fads and beyond are telling us and learn some health truths and healthier eating together.

The whole food recipes and researched-based information are my gift to help you continue to enjoy food while achieving your health, weight, and life goals.

I’ve searched and tested and made great recipes for the things we love using whole food ingredients that are healthful for most people in my practice. I’ve also included reasons why I’ve selected these ingredients and other nutrition thoughts.

All recipes are whole food, nutritious, wheat-free, grain-free, cane sugar-free and corn-sugar-free and most can accommodate other dietary restrictions.
