Chilled Coconut Soup

Those hot days of summer call for a cool, refreshing, and most of all easy start to any meal. Or combine with a salad for a light lunch.

And best of all, you may be surprised to know that coconut is incredibly healthy. Coconut is high in useable forms of  (meaning the body can actually absorb and use) calcium, magnesium and other minerals, fats that may improve cardiovascular health and other fats plus vitamin C that help your body fight infections.

Serves 4

Ingredients
2 cups or a 13 oz can of organic coconut milk
1 cup unsweetened shredded coconut
1½ cup organic chicken broth
1 cucumber, peeled if waxed, and chopped
½ tsp salt
½ tsp fennel seed
juice of 1 lime
¼ cup chopped cilantro for garnish

Preparation

1. Put all ingredients except the cilantro into a strong blender or Vitamix.
2. Puree until smooth.
3. Pour into individual serving bowls and garnish with cilantro
