Many varieties so have fun with this simple appetizer. It works well with basil or arugula as the green while prosciutto lends a salty contrast to the fruit’s sweetness. Most any fruit will work. My personal favites are peaches, nectarines, pears, peeled and sliced melons if you like them.
The best part is how simple the are to make (hint: no need to cook anything) and how festive these appetizers look.
Another best part is they can be refrigerated for when children come home from school or working adults come home hungry.
Here’s a version with arugula:
Here’s how to make them:
Serves 4-6 as appetizers.
Ingredients
3 nectarines, peaches or pears, pitted and sliced into eights
1 cup fresh basil washed and trimmed or 1.5 cups fresh arugula
6 ounces thin-sliced prosciutto
Instructions
- Drape a slice of prosciutto over the palm of your hand. Place fruit on top of the prosciutto slice in your hand and place a few sprigs of greens alongside, so their ends and tufts of greens stick out..
- Gently roll the prosciutto to hold the appetizer together.
- Arrange on your serving platter to give a healthier appetizer option than chips.
