Don’t be fooled by Atlantic salmon, Alaska wild caught is hands-down better!

According to the stick in my back yard, we are now down to just over two feet of snow remaining. So we must be close to fishing season and barbeque season–you’re following my logic, right? I love those days in the great Alaska sunshine, the breeze in my hair, and the fish are running. I love stocking my freezer with wild salmon: kings, silvers, reds… And this handful of recipes is sure to please: Pine Nut & Basil Encrusted Salmon Grilled Jamaican Jerk Salmon Southern Alaska Salmon Cakes Just please don’t use farmed fish. Here in Alaska, where wild salmon … Continue reading

The adventures of chocolate and grass-fed beef …

Although the Irish in me absolutely loves my brisket as corned beef and cabbage; slow cooked to perfection and tenderly falling apart—this year I wanted something just, well, different. I wanted adventure. Not only that, but whatever I cooked had to accommodate my time constraints of either being in the office completing the Alaska Health Improvement Center expansion and remodel or out on the ski slopes enjoying our record-setting Anchorage snowfall. Both of those reasons are why I haven’t written in quite a while—good problems to have, sorry for the hiatus, I hope this makes up the damage 😉 I … Continue reading

Berry & Nut Muffins

Unlike soy and corn oil, the coconut used in this recipe does not interfere with thyroid function, and there is plenty of evidence that it supports the body’s innate ability to destroy bacteria, viruses and yeast, reduces risk of atherosclerosis and related illnesses, reduces risk of cancer and other degenerative conditions, supports immune system function, helps prevent osteoporosis, helps control diabetes, promotes weight loss, supports healthy metabolic function, helps keep skin soft and smooth, helps prevent premature aging and wrinkling of the skin, helps protect against skin cancer and other blemishes, and is heat resistant making it one of the … Continue reading

Fuel for Athletic Performance: natural sports drink power.

I originally wrote this as a letter to my son’s football team—teammates and parents asked me why “the second half bust”: fatigue. Truly, this applies to everyone looking to have athletic energy and reduce fat. All those sugary Gatorade drinks and sweet game treats are literally killing athletic performance–and ability to burn fat for fuel. Switch to natural sports drinks and the correct game prep plans. Electrolytes are only part of the story… And the team? Currently #1. Want some help with ideas? Check out this site’s fabulous and “kid-tested” recipes including the now-famous “Football Chicken Satay.” Dear Wolverines, you R-O-C-K! … Continue reading

Healthy Brain Power Snacks for Our Children

This week is Standards Based Assessment (SBAs) at our son’s elementary school. We really appreciate the reminders from our Superintendent to give our children the assets they need during these high-performance times. Great idea to reduce sugar, increase wholesome foods, eliminate video games and electronics, and bottom line let them focus. Here are a few suggestions from Our Nutrition Kitchen — Enjoy!! What you really need to do about radiation…

While it is true that several United States EPA air monitors, including Anchorage, are now detecting above normal radioactive iodine levels following the Fukushima nuclear plant incident in Japan, these levels are still far below the levels of public health concern and we do not expect harmful levels of radiation in our state. For a full map of detection sites and reports please visit here: (http://www.epa.gov/japan2011/) As explained in an earlier report, taking iodine as a preventive measure is not a wise choice and can cause serious health problems, even though some fear-driven reporting has recommended doing so. Not to … Continue reading

People in the western parts of the US and Canada are snapping up Potassium Iodide pills and solutions, should you??

Our thoughts and prayers certainly go out to those affected by Japan’s earthquake, tsunami, and nuclear generating plant crisis. I’m going to give you my assessment of the radiation threat here in Anchorage and try to help–have certainly received many, many calls of the “should I stock up on iodine?” sort. The idea going around is that taking iodine (potassium iodide) can help as a preventative medication against possible radiation fallout. Thing is, you can do more harm than good by taking iodine if you don’t need it. Here’s the data: First of all, iodine in any form will only … Continue reading

Greetings Healthy Friends! Healing with whole food.

Why I started this whole food nutrition and recipe resource Perhaps at no time in history have Americans eaten so poorly and had so many health issues while at the same time being bombarded by messages to have more of this or that and less of the other—always for health reasons, it seems. Unfortunately, most of today’s consumption nutrition decisions are driven by corporate marketing and not by sound nutrition advice. The scales have tipped. We out of balance and we are paying for this with our health, quality of life and enormous medical costs. Our bodies must be given what they uniquely need to support life, health, and maintain … Continue reading
