When I found the original (sad) recipe, a most delicious Alaska halibut was smothered in inches of Ritz crackers, saturated with sneaky sources of sugar and unhealthy fats (mayonnaise). The health make-over wasn’t hard at all–we bring you a high-protein, nutritious and delicious main dish. Plus it gave us an excuse to help you enjoy mayonnaise again—the healthy way. Enjoy!
Serves 4
Ingredients
2 lb Halibut filet (Cod works also)
¼ cup pasture butter
1 large yellow onion, sliced
1 cup “sour cream without the cream”
1 cup “egg-lover’s mayonnaise” or avocado oil mayonnaise you can purchase like this or this.
¼ cup chopped green onions
3 Tablespoons. freshly squeezed lemon juice
1 cup chopped pecans
Preparation
- Melt butter in large frying pan. Add sliced onion and sauté until onion is translucent then spread evenly over bottom of baking pan; set aside.
- In a bowl, mix together sour cream, mayonnaise, green onions and lemon juice. Arrange halibut over top of onions. Spread sour cream and mayonnaise mixture over the top of the fish and sprinkle with pecans.
- Bake at 375°F for 40-50 minutes depending on the thickness of the halibut.
