This amazing cilantro dressing came from my garden this year. Anchorage Alaska is a cold weather season. Hard to grow tomatoes and cucumbers. Greens like chard and kale, and cilantro do quite well. In honor of summer… enjoy!
Ingredients
2 cups fresh cilantro
1 garlic clove (omit if FODMAP sensitive)
¼ cup fresh lime juice
2 teaspoons maple syrup or honey
½ teaspoon ground coriander
½ teaspoon sea salt
½ cup extra-virgin olive oil
Make it creamy (optional – choose one):
1 avocado
½ cup nut milk yogurt
Preparation
Oh so simple: put everything in a Nutribullet or similar. Blend. Done.
This is a lovely dressing. Great over baked halibut also. Or use your imagination.
